vinification

The harvest takes place early in the morning. After pressing, the must is pumped into steel tanks, fermented spontaneously and continuously mixed with the yeast on the bottom (bâtonnage).

Für den Rosato Lemár werden die Trauben früh morgens zwischen 4 Uhr und 9 Uhr in kleinen Kisten à 10 kg von Hand geerntet. Danach kommen diese umgehend in einen gekühlten Container, um die Kerntemperatur unter 7°C zu bringen. Das verhindert eine spontane Gärung der Trauben und deren Oxidation. In der Cantina werden die unsauberen Trauben auf einem Selektionstisch aussortiert. Ein Vorgang, der bei der Roséherstellung äusserst selten ist.
