The different grape varieties for Collazzi - Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot - are harvested and vinified separately. The grapes are hand-picked on a vibrating sorting table to remove small foreign bodies such as spoiled grapes or leaves. After fermentation in stainless steel tanks at temperatures below 30 °C, there is a maceration period of 18 days. Malolactic fermentation takes place in barriques (50% new, 50% second passage). The 18-month aging in wood takes place in Collazzi's underground cellar at a natural temperature of 15 °C, followed by a further 12 months of bottle aging. The first vintage was produced in 1999.
