grape varieties

85% Glera and 15% Pinot Noir

vinification

Glera and Pinot Noir are harvested separately. To extract the color, the Pinot Noir undergoes a pre-fermentative maceration period of about 12-16 hours. After the first fermentation is complete, both wines are mixed and fermented for the second time using the Martinotti method, which creates the perlage. This process takes an average of 2 months.
