Vineyard orientation: Northeastern side of Etna at 600-700 m above sea level. Harvest takes place in mid-October. Fermented spontaneously without temperature control in cement tanks, maceration in contact with the skins for 30 days. Aging: 18 months in cement tanks. Malolactic fermentation takes place spontaneously. Annual production: 30,000 bottles
