The fermentation of the base wines takes place separately for each variety in stainless steel at a temperature of 14-16 °C. The bottle fermentation lasts about 38 months. With the pas Dosé, there is no addition of the so-called "Liqueur d'Expedition", only refilling with wine from other bottles.
