The fermentation of the two varieties takes place separately at 15-16°C (rosé vinification of the Pinot Noir grapes with short maceration and mash fermentation on the skins) 2. Bottle fermentation approx. 24 months.

Aperitif, also goes well with fish starters and seafood. Interesting with oriental dishes and generally with spicy dishes.
