vinification

Fermentation occurs spontaneously with the wine's own native yeasts in small stainless steel tanks. After maceration on the skins, the wine is drawn off and transferred directly into barriques made of the best, fine-grained French oak, where malolactic fermentation also takes place. The wine is aged for 18 months in French oak barrels. The wine also matures for a further 6 months in the bottle before it is released onto the market.

Stefano Chioccioli, one of the most respected and awarded winemakers in the region, runs the family winery. Under his care, a true gem was created in a very short time. Together with his two sons Niccolò and Enrico, they tend the winery in Gaiole Chianti as well as the vines in the two classico zones Quercegrossa and Gaiole Chianti itself with the finest craftsmanship. The soils are medium-textured, rich in limestone and marl. With 5000 vines per hectare and an average yield of 30 hectoliters per hectare, the output is rather small and well below the legal requirements.
