The grapes are harvested by hand in small boxes and carefully selected. Fermentation takes place spontaneously with native yeasts cultivated in terracotta amphorae. After bottling, the wine ages in the bottle for at least 2 months before being released onto the market. Sanforà is a bright and lively summer wine with fresh, Mediterranean nuances.

Stefano Chioccioli, one of the most respected and awarded winemakers in the region, runs the family winery. Under his care, a true gem was created in a very short time. Together with his two sons Niccolò and Enrico, they tend the winery in Gaiole Chianti as well as the vines in the two classico zones Quercegrossa and Gaiole Chianti itself with the finest craftsmanship. The soils are medium-textured, rich in limestone and marl. With 5000 vines per hectare and an average yield of 30 hectoliters per hectare, the output is rather small and well below the legal requirements.
