The process involves a six-day spontaneous fermentation, the use of a "Frilli" pot still, a hybrid copper still, and a single discontinuous distillation. The whisky is then aged in Tuscan oak barrels previously used to store high-quality Tuscan wine.

Stefano Chioccioli, einer der meist geachteten und ausgezeichneten Winzer der Region, leitet das Familienweingut. Unter seiner Obhut wurde in kürzester Zeit ein echtes Juwel geschaffen. Mit seinen zwei Söhnen Niccolò und Enrico pflegen sie das Weingut in Gaiole Chianti sowie die Reben in den zwei classico Zonen Quercegrossa und eben Gaiole Chianti in feinster Handarbeit.Die Böden sind mitteltonig, reich an Kalkstein und Mergel. Mit 5000 Reben pro Hektar und einem Ertrag von durchschnittlich 30 Hektoliter pro Hektare, ist die Ausbeute eher klein und weit unter den gesetzlichen Vorgaben.
