The process involves a six-day spontaneous fermentation, the use of a "Frilli" pot still, a hybrid copper still, and a single batch distillation. The whisky is then aged in Tuscan oak barrels previously used to mature Vinsanto.

Stefano Chioccioli, one of the most respected and awarded winemakers in the region, runs the family winery. Under his care, a true gem was created in a very short time. Together with his two sons Niccolò and Enrico, they tend the winery in Gaiole Chianti as well as the vines in the two classico zones Quercegrossa and Gaiole Chianti itself with the finest craftsmanship. The soils are medium-textured, rich in limestone and marl. With 5000 vines per hectare and an average yield of 30 hectoliters per hectare, the output is rather small and well below the legal requirements.
