Manual late harvest in small boxes, gentle destemming, maceration and fermentation on the skins for 7-8 days. The wine is aged for two years in new barrique oak barrels. The Bionzo is only produced in top years and is limited to 2000-3000 bottles.

Das Weingut befindet sich in Costigliole d’Asti. Das geschichtsträchtige, kleine Städtchen liegt zwischen Langhe und Monferrato. Die Produktion grosser Weine aus dieser Umgebung liess die Hügel im Umkreis weltbekannt werden. Die Azienda Boeri produziert bereits in der 4. Generation den renommierten Barbera d’Asti DOCG und Moscato d’Asti DOCG, zusammen mit anderen typischen Weinen des Astigiano. Das Weingut mit 10 ha Rebland liegt auf der Collina Bricco Quaglia, ein von früh bis spät sonnenverwöhnter Hügel.
