Manual late harvest in small boxes, gentle destemming, maceration and fermentation on the skins for 7-8 days. The wine is aged for two years in new barrique oak barrels. The Bionzo is only produced in top years and is limited to 2000-3000 bottles.

Boeri

The winery is located in Costigliole d’Asti. This small, historic town lies between the Langhe and Monferrato. The production of great wines from this area has made the surrounding hills world-famous. For four generations, Azienda Boeri has been producing the renowned Barbera d’Asti DOCG and Moscato d’Asti DOCG, along with other typical wines from the Asti area. The 10-hectare winery lies on the Collina Bricco Quaglia, a hill that enjoys sunshine from early morning until late evening.
