Matteo Da Ponte already published a book titled "DISTILLAZIONE" in 1896. The distillation flasks and distillation columns he patented for condensing alcoholic vapors and refining a natural but flavor-wise raw and rough distillate were described and illustrated there for the first time. The "Da-Ponte" method has the advantage of capturing and preserving the most important aromatic components of the grape aroma, that is, the most delicate and volatile, in the distillate. This precise separation from the heads and tails produces the best that nature has to offer: naturalness, purity, and flavor finesse.
