Fermentation for 15-20 days at a controlled temperature in stainless steel tanks. Malolactic fermentation in stainless steel. Aging for two years in large barrels, tonneaux and partly in first and second passage barriques.

Die Kellerei befindet sich am Stadtrand von Montepulciano bei der historischen Kirche Santa Maria delle Grazie. Die Gesamtfläche des Weinguts beträgt 104 ha, wovon 32 ha mit traditionellen Rebsorten bepflanzt sind. Die jährliche Weinproduktion liegt bei 100'000 Flaschen und einem Exportanteil von rund 50%. Der Gewölbekeller befindet sich unter der Piazza Grande mit geschichtsträchtiger Vergangenheit. Die pittoresken Gänge und Tunnels kann man besichtigen und fühlt sich dabei wie in alte Zeiten zurückversetzt. Der unterirdische Keller mit einer Klimaanlage ausgerüstet, welche die Temperatur und Feuchtigkeit reguliert.
