An innovative grappa produced in a vacuum distillery. This innovative process means that the pomace is not exposed to heat, which gives the distillate an incomparable aroma. The subsequent maturation in oak barrels ensures further refinement.

Poli Jacopo

The Poli distillery was founded in 1898 and is now run as a family business by the siblings Barbara, Andrea, Giampaolo, and Jacopo. The distillation is done traditionally in batches, which produces the best quality. The raw materials vary depending on the final product. For the classic grappa production, the pomace is distilled, while for the "Chiara" line, whole berries with skin and pulp are used. The grappa museum, which is attached to the distillery and can be visited daily, is also worth seeing.
