100% Trebbiano

vinification

The grapes come from 30-year-old vines, which are planted 350 meters above sea level and harvested by hand at the beginning of September. The grapes are destemmed and cold mashed for a few hours, gently pressed and fermented at 18 °C with local yeasts. A small selection of the must is stored in a small tank at 0 °C. In February, the white wine is blended with the must and bottled with its own yeasts. The must still has some residual sugar and is in the middle of fermentation, which means that it continues to ferment uncontrollably in the bottle and acquires its bubbles. The wine is not fined, filtered or sulphurized.
