Hand-picked, pressed in tanks and macerated for 7-15 days at a controlled temperature of 24/26 degrees. Racking (saignée) of 15/20% to obtain more fullness, extract and color. Aging in steel tanks for at least 6 months and then 2 months in the bottle.
