The grapes were left on the vine after a previous harvest, which extended the ripening by a further week. 70% are destemmed and mashed. Fermentation takes place in open oak barrels with a capacity of 30 hl with exclusively the wine's own yeasts. Aging in cement tanks for 18 months.

Diese Kellerei wurde 1984 von Michele Satta gegründet. Nach einigen Hochs und Tiefs hat er sich an der Spitze der Produzenten aus der Maremma etabliert. Das Maremma-Gebiet (bei Grosseto) mit seinen Kalkböden und zum Meer ausgerichteten Rebbergen, hat ein grosses Qualitätspotenzial. Das Gebiet erlangte dank dem Sassicaia Weltruhm. Im Jahre 1993 startete Michele Satta einen Versuch und pflanzte Cabernet und Merlot an, und schon bald folgten auf rund 7 ha Syrah-Reben. Diese Sorten werden einzeln ausgebaut und später zur Assemblage für seinen berühmten Piastraia oder den neuen Bolgheri DOC verwendet. Mittlerweile umfasst das Weingut 25 ha Rebland.
