Fermentation takes place spontaneously with native yeasts in barriques, with Altore also carrying out the malolactic fermentation. After a long maceration on the skins, the wine is transferred back into barriques where it is aged for 24 months. In addition, it matures for at least 12 months in the bottle before being released onto the market.

Stefano Chioccioli, one of the most respected and awarded winemakers in the region, runs the family winery. Under his care, a true gem was created in a very short time. Together with his two sons Niccolò and Enrico, they tend the winery in Gaiole Chianti as well as the vines in the two classico zones Quercegrossa and Gaiole Chianti itself with the finest craftsmanship. The soils are medium-textured, rich in limestone and marl. With 5000 vines per hectare and an average yield of 30 hectoliters per hectare, the output is rather small and well below the legal requirements.
