The grapes are harvested exclusively by hand, delivered in small containers, and gently pressed. The must ferments at a controlled temperature (19°C) in wooden barrels, partly with malolactic fermentation. The wine is then aged in barriques, tonneaux, and large 12-hl wooden casks.
