After the harvest, the grapes are delivered in small containers and then gently pressed. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature (19°C). The majority of the wine is aged in steel tanks. 20% is aged in large oak barrels without malolactic fermentation.
