vinification

After the hand-harvest, the grapes are delivered in small containers. The must ferments in large wooden barrels at a controlled temperature of 28°C, followed by malolactic fermentation. Aging takes place in barriques for 12 months and a further six months in concrete vats. After bottling, the wine is aged in the bottle for at least another six months.
