The grapes are mashed in a low-oxygen environment and left to stand for a short time so that additional aromas and fullness can be extracted from the grape skins. This is followed by a very gentle and also low-oxygen winemaking process in order to preserve the fresh, varietal fruit of the Sauvignon Blanc.
