vinification

Fermented in Allier oak barriques at around 17-19 °C for 5/7 days. The first 5 months with weekly bâtonnage, then every 14 days. 12 months of maturation in Allier oak barriques (40% new / 30% 2nd passage / 30% 3rd passage)
